Sage and Watercress Pesto

At times when in Australia it is not good growing weather for basil and not wanting to purchase non organic basil I had to think creatively in order to make a pesto.  A friend of mine has a huge bush of sage growing which she happily shares with me. This recipe is divine I almost prefer it to basil pesto now.

Sage and watercress pesto
1/4 cup activated nuts
1/4 cup activated sunflower seeds
1 garlic clove
1 bunch watercress
6 sage leaves
good swig of olive oil

In a food processor place the nuts sunflower seeds and garlic and process until fine. Add the watercress and sage and pulse until combines. Add salt to taste and a good swig of oil. Great on bread, crackers or on boiled potatoes.
